Mr. Vandy's Hummus Eggs

Back in the day before we had kids, Mr. Vandy had a handful of dishes he knew how to make. My fave was and always will be his hummus eggs! Reminds me of our trip to Spain!


Super easy to make! Great for breakfast, lunch or dinner. We serve over greens and top with broccoli sprouts, but you can also serve over toast or just eat the eggs on their own.





Ingredients

Two eggs - scrambled*

One and a half tablespoons of hummus

A pinch of pimenton (Smoked Paprika works, too!)

Half a tablespoon of capers

Arugula and Broccoli Sprouts to serve.


Instructions

Scramble your eggs and cook. Remove from pan and add the capers, pimenton and hummus. Mix together. Serve over arugula or toast. So easy!


When I serve this for dinner, I usually double the recipe per person. Pairs well with a glass of white!


*Don't even think of only having egg whites. All the vitamins and minerals are in the yolk. I promise eating the yolks will not make you fat!
