Oatmeal Banana Pancake Recipe

The BEST gluten free dairy free pancakes! I have been perfecting this recipe over the past decade! š„
This is the Vandy Fam's go to pancake recipe.
These have oatmeal and banana and very little actual flour, so your blood sugar won't spike after eating these. They are also really filling and satisfying! š
Ingredients
1 1/2 cups almond milk
1 cup oats
2 bananas chopped
1/2 cup gluten free flour
1 teaspoon vanilla extract
1 tablespoon plus one teaspoon baking powder
In your blender puree oats and almond milk. Add the rest of the ingredients and blend until smooth. Let rest for 5 minutes so the baking powder can do its thing, and then cook.
If you have a Vitamix, you can double this recipe easily!
P.S. You can even throw an egg into the batter for extra protein... I do this often because my three year old refuses any food with protein in it and it comes out perfectly!
