The BEST Mashed Cauliflower

Turned these ingredients into ➡️ a delicious fall comfort food dinner! Roast chicken and mashed cauliflower.






The mashed cauli tastes JUST LIKE mashed potatoes! Prepare to be amazed!


Side note.... Does anyone else feel sort of bad for cauliflower? No one ever asked it if it wanted to be all these things 🤣 So glad it's having it's moment though! 🥂 Cheers, Cauli!


Okay, recipe!


Ingredients:

- 1 head of cauliflower (chopped)

- 3 tablespoons grass fed butter (I like Kerrygold 🇮🇪)

- 1 head of roasted garlic (I make in bulk and freeze it so always have it on hand)

- 1/4 teaspoon of dijon mustard (Maille is the best 🇫🇷)

- Salt and Pepper


Instructions:

- Boil the cauliflower for about 10 minutes until tender.

- Drain the cauliflower and transfer to a food processor. (Make sure you drain it really well! No one likes soggy mashed cauli!)

- Puree with the garlic cloves, butter, mustard, salt and pepper until smooth.


And that's it! You made mashed cauliflower, and everyone will think it's mashed potatoes! Healthy life = Happy life! 🙌
