Vandy Once a Week Frittata

This is a staple in the Vandy Fam!
Super easy and healthy!
I am dedicating this post to the lovely, Colleen Paulsen. This one's for you, Betty.

Ingredients
- 10 eggs (Obvi beaten)
- 1 onion (Chopped)
- Oil or butter (your choice - I used EVOO)
- Chicken sausage (I had some leftover from last night's pasta, but you can use any sausage... or leave it out for a #vegetarian meal)
- A handful of broccoli sprouts (Because they are good for you, and you won't even taste them)
- Kale* (Usually like to keep it fresh, but only had frozen tonight. You know I 💯 would have added #dandygreens if I had them in the fridge! 💁)
- Goat cheese (We steer clear of 🐄 dairy in the Vandy 🏠)
Now...
Saute your onion for twoish minutes. (If you don't know how to saute, check with your friend, Google!) Add your kale and broccoli sprouts to your onions for like 30 seconds. We are looking for slight wilting here. Remove it all from the pan after 30 seconds! Quick! Hurry!
If you've made it this far, you're a rock star. ⭐ Add more oil or butter, then your scrambled eggs and sausage to a hot pan and re-add the veggies. Make sure your heat is medium high for this part. Things are happening!
Once your egg is slightly firm, add your goat cheese on top and move the whole kit and kaboodle to your broiler. (This is a setting in your regular oven... If you don't know how to use it, check with your friend, Google!) Broil until your egg is set. Congratulations! You made a frittata!
I use a pizza cutter to cut it up. #protip
Serve with arugula on the side. Great for breakfast, lunch or dinner. I especially love it for dinner with a glass of white, and have the leftovers for breakfast the next day.

Side Salad Sitch: 🥬
- Arugula, #broccolisprouts, and dressing. That's all, folks. I will not insult your intelligence by telling you how to make this...
*If you go with frozen kale, throw half the bag in a bowl. Jujzdge (technical term) it in the microwave for 30 seconds. Put the defrosted kale in a kitchen towel and wring all the water out over the sink. If you go with fresh, 5 stalks should do you. 🙌🥬
