Turkey Pho - A Vandy Fam Thanksgiving Tradition!

I love having family traditions for our little Vandy Fam! The day after Thanksgiving we have pie for breakfast, leftovers for lunch, and after three rich meals in a row... its time for a reset.


One of my fave health-centered traditions is making turkey pho soup for dinner on Black Friday. (P.S. Why, for the love of God, is called Black Friday? What an awful turn of phrase....)




We make the easiest turkey stock from our turkey carcass. Check out my recent post on how to make stock in your crock pot overnight. You will be blown away by how easy it is!


The recipe is super easy and comes together in 10ish minutes! Faster than take out!

Ingredients:

3 quarts of turkey stock

3 cups of filtered water

2 cups of turkey breast cut into small pieces

4 ounces of rice noodles

5 tablespoons of fish sauce

1/2 tablespoon of salt (add more if you want, salt is sort of personal ingredient)

Juice of half a lime


Garnish Options:

Chopped cilantro

Bean sprouts

Thinly sliced onion

Thinly sliced jalepeno

Lime

Hoisin Sauce

Sriracha Sauce


Directions:

To your turkey stock and filtered water, add fish sauce and salt.


Bring your stock and water up to a boil. Add in the turkey breast.


After about a minute, add in your rice noodles. They cook in about a minute! Things are happening quickly!


Remove from the heat and add your lime juice. Taste for seasonings. Cut up your noodles with kitchen shears.


Portion out and serve! So easy!


Now it's time for everyone's fave part... the garnishes. This is personal, so I'm not going to micro manage y'all on this. But traditionally, one adds cilantro, bean sprouts, jalapeno, lime, onion, and the sauces.


I like to add a ton of cilantro (super detoxifying green! I add sriracha and mix that in, then add the hoisin to the bites I take with noodles.


My husband is just all about the sriracha and jalapenos. The kids only like onion, and a little cilantro - hold the sauce, please mom! To each their own!
